Mackerel and avocados
Mackerel in oil (1 can) – Avocado (1 unit) – Lemon (a few drops) – Salt – Pepper
We open a can of mackerel and reserve the oil. Crush the avocado with a fork and add salt, pepper, the oil from the can and some drops of lemon.
Assemble the skewer by placing the mackerel loins on the avocado base and decorating with chopped coriander or chives.
Tuna with pickle
Tuna (1 can) – Mayonnaise (1 tbsp) – Mustard (1 tsp) – Chopped nuts (1 handful) Purple onion (1 piece) – Large gherkins
We drain the oil from the can and discard it. We mix the very crumbled tuna with the finely chopped onion, the chopped nuts, the mustard and the mayonnaise.
Mount the skewer by putting a little of the mixture on a thin slice of gherkin and making a roll on the bread.
Sardines with lime
Sardines in oil (1 tin) – Red piquillo pepper or a slice of tomato (1 unit) – Rocket leaves – Lime (a few drops) – Ground ginger (a few drops) – Salt
We open the can and reserve the oil. We mix it with the lime and ginger. To assemble the skewer, put the rocket leaves on the toasted bread.
Then we continue with the tomato or pepper. When we have everything settled, we put a couple of sardines sprinkled with their flavoured oil.
As ideas to flavour the oil from the sardine can you can also add some lemon or orange rind.
