Ingredients for 2 people:
Sadinas (sardines) in olive oil (1 tin) · Nem rice (4 slices) · Lettuce (4 leaves) · Grated carrot (100 gr) · Avocado (100 gr) · Sweet onion (30 gr) · Sesame seeds (3 gr) · For the spicy emulsion: Whole milk (20 ml) · Sunflower oil (100 ml) · Spring onion stem (10 gr) · Soy sauce (10 ml) · Dried tomato (10 gr) · Honey (5ml)
Submerge the rice wafers in a bowl with cold water. Cut in julienne the carrot, the leek, the cucumber and some lettuce leaves.
Spread the hydrated rice wafers and fill with the vegetables. Add a sardine to the wafer.
Roll up the nem by first folding the edges and wrapping the filling. Prepare the emulsion with soy sauce, coconut milk and sesame oil.
Spread some sesame seeds over the nem and serve with the emulsion.
