Pad thai is a typical dish of Thai cuisine that is based on cooking noodles or rice noodles in a wok by adding different ingredients.
On this occasion, we will prepare a delicious Pad thai with canned cockles.
Cockles (1 can) – Rice noodles (200 g) – Onions (2 pcs) – Garlic (2 pcs) – Prawns (8 pcs) – Mushrooms (1 small tray) – Chopped tofu (1/2 cup) – Soya shoots (100 g) – Pad tahi sauce (80 ml) – Roasted and chopped peanuts (2 cds) – Olive oil – Salt
We prepare a bowl with water at room temperature and leave the noodles to soak for approximately 1 hour (or as indicated by the manufacturer)
In a wok, or frying pan if you don’t have one, heat the oil over a high heat and add the spring onions and garlic previously chopped and without stopping stirring, leave to cook until desired. When they reach the add the peeled prawns, the chopped tofu and the mushrooms and leave them until they are cooked.
Then add the rice noodles, mix and add the pad thai sauce, the soya shoots, the chopped peanuts and the cockles (previously drained and reserving the liquid) and stir well so that all the ingredients are mixed.
